How do I use Ceylon Cinnamon Sticks?

How can I tell Ceylon cinnamon apart from cassia?

Ceylon sticks are thin, light brown, and made up of delicate papery layers rolled together to resemble a cigar. They're soft enough to break by hand and have a mild, slightly sweet smell.

Cassia sticks are thicker, harder, darker, and usually just one curled layer like a scroll. If your cinnamon stick looks rough and reddish-brown, it's likely cassia.
