White pepper is handmade from fully ripe pepper berries. The berries are soaked in water for about 10 days, leading to fermentation. The skins are removed, which also removes some of the hot piperine as well as volatile oils that give black pepper its aroma. This results in white pepper having a different flavor and heat component than black pepper.
White pepper should be added after the dish has been cooked.
