A medida que maduran, las bayas de pimienta cambian de verde a amarillo y luego a rojo. Si el producto final es pimienta negra, se recolectan cuando aún están algo verdes y se secan. Se utiliza la baya entera o el grano de pimienta. Al secarse, la piel se arruga y adquiere un color marrón oscuro o negro.

Al moler los granos de pimienta, se obtiene un polvo de partículas claras y oscuras. La pimienta blanca se produce retirando la piel oscura y utilizando solo el corazón. What's the difference between white pepper and black pepper?
