Les grains de poivre noir de Ceylan sont réputés pour leur forte teneur en huile volatile, ce qui leur confère un goût très piquant. À mesure que les baies de poivre mûrissent, elles passent du vert au jaune, puis au rouge. Pour obtenir du poivre noir, les baies sont cueillies encore jeunes, puis séchées. On utilise la baie entière, ou le grain de poivre. En séchant, la peau se ride et prend une couleur brun foncé ou noire.
